I probably don’t need to tell you guys that I’m a foodie at heart. Over the past couple months, especially, I’ve gotten more and more interested in experimenting with ingredients, learning new methods and chowing down on the results.. That said, even a food lover like me can fall into a slump when even my most tried-and-true favorites just don’t hit the spot. In my experience, the only way to combat “palette fatigue” is to mix it up and try something totally unexpected.
Enter grilled corn, aka the dish that yanked my entire family out of culinary malaise. Tossed on the “barbie” until it’s a crisp golden hue, then drizzled in a spicy cashew-based sauce, this recipe from The Minimalist Baker is the perfect addition to any summer meal. The caprese is of course optional, but always recommended.
