Just like the fashion world, the foodie universe is constantly flip-flopping from one trend to another. Whereas last month people were raising their hands in praise matcha, nowadays you can barely visit a food blog (something I do embarrassingly often) without seeing one recipe or another that includes tahini. “Tahini?” You might ask. “What’s that?” To keep a long story short, tahini is a paste hulled from sunflower seeds. Aside from it’s lengthy history as a main ingredient in the cuisines of North Africa, the Mediterranean, and the Middle East, tahini has a rock-solid nutritional profile. With an abundance of calcium and protein, as well as essential omega-3 fatty acids, this peanut-butter like condiment is sure to find a place on your shelf sometime soon.
