Squash ‘n’ Beans Tacos

Autumn is officially in the air, which means one of my favorite vegetables, squash, is in season. Even though it is technically available year-round, there is something about eating squash while the leaves are falling that feels so cozy and special. I’ve been busy packing in as much as I can this season- yes, the butternut squash soup has been on heavy rotation.

But, alas, even creatures of habit like me need to switch up once and a while. Enter these Delicata Squash Tacos with Black Beans, brought to you by seasonal veggie connoisseur Naturally Ella.


Now, I know what you’re probably thinking. Squash tacos? That’s a little too weird, even for me. But just listen for a minute: Not only is this recipe made with fresh, whole ingredients, but it is super-simple and warming as well. In other words, the perfect secretly-good-for-you comfort food for a chilly fall evening. My family practically swallowed them whole…and I’ve got a feeling you will, too. 😉
