When I was in elementary school, I brought a peanut butter and jelly sandwich to school every day.
I’m not kidding. Every. Single. Day.
What can I say? I’m a girl who knows what she likes. But my PB&J phase ended when middle school started, and I traded my Vera Bradley lunchbox (what? they were all the rage) for a plastic tray. Until recently, I couldn’t even remember the last time I had a good ol’ fashioned peanut butter and jelly confection. So, you can imagine how my inner child jumped at the chance to whip up an updated take on my classic favorite.
In essence, the Grown-Up PB&J (inspired by this recipe) is very similar to the original: two pieces of bread, which can be toasted or un-toasted (I toasted mine), with a generous serving of nut butter (as per usual, I used almond) slathered on the both slices. The “grown-up” part comes in with the “J”: the recipes swaps sugar-laden grape jelly for homemade blueberry chia seed jam. This is surprisingly easy to make, as it takes only about twenty-five minutes and doesn’t make too much mess. Not to mention, it’s insanely delicious when smushed between two pieces of warm bread lathered in nut butter.
I mean, my stomach is growling just while thinking about it. That kind of good.
At the rick of stating the obvious, I really enjoyed this culinary walk down memory lane. There is something so comforting about the taste of a PB&J, and I’m glad to now have an equally delectable alternative for whenever I’m feeling nostalgic. Or, you know, just really, really want a peanut butter and jelly sandwich.
Which, as I mentioned above , very well could turn into an everyday thing.
