After New Years’, as I was attempting to piece my diet back together, I went into a serious salad kick for a few days. I couldn’t tell you what exactly prompted my new obsession with all things salad-related, especially given since I have never gravitated towards them before, but suddenly I was hooked. At the peak of this phase, I concocted few different combinations on a whim. (Salads, after all, are endlessly customizable.) The clear winner? The heaping bowl of all deliciousness you see above. Healthy, refreshing, and, best of all, thrown together in under five minutes, to say this was a fabulous dish would be an understatement. Want to make it for yourself (which, let’s face it, you know you do ;))? Follow along for the recipe below:
Chicken, Avocado, and Apple Salad
1 generous handful of your favorite greens (I used baby spinach, but regular lettuce or even kale would substitute just fine)
1 cup grilled or roasted chicken, cubed
1/4 of an avocado, sliced
roughly 1/2 an apple, cut into small chunks (I prefer green apples, so that’s what I used, but feel free to play with red or yellow, as well!)
No complicated steps here: simply gather all of your ingredients, toss them together in a bowl, and enjoy!
