I think we can all agree that, in terms of favorite exotic dishes, Chinese fried rice tops the list. The only problem with this universally adored dish? It can wreck havoc on your diet. Thankfully, there are more than a few alternatives to the traditional meal. I gave one recipe a spin a few weeks ago, and was very pleasantly surprised.
I whipped up this Paleo Chinese Cauliflower “Fried” Rice, on a bit of a whim. We had had a rather indulgent weekend over at our house, and were searching for something light to nibble on. I had just come across this recipe on paleomagazine.com, and decided it fit the bill. I mean, the dish is literally cauliflower, assorted veggies, and scrambled eggs. You would be hard-pressed to find something “cleaner”.
I had never tried my hand at cauliflower rice before, and had no clue what to expect. Like I said above, I was very pleasantly surprised by the end result. It really did feel like rice or couscous! The food processed florets of cauliflower were warm and scrumptious, made even better by the carrots, asparagus, and sprinkling of egg we tossed in with it.
You can never have to many healthy go-tos, and this recipe has certainly joined the family list of staples. I cannot wait to make it again!
